Fischer Bargoin N1260 30cm Round Standard Grade Sharpening Steel Yellow Handle
The Fischer N1260 is part of the Eco Chef series, constructed with a classic food-safe polypropylene handle and an integrated safety guard. This is a round steel of standard grade, enabling the sharpening of knives (as opposed to honing). Standard cut steels should only be used on occasion for blunt knives.
Constructed from FILE steel 100 C6 (high carbon content (1%), chrome, manganese and silicon)
Magnetised to ensure tiny steel particles from the grinding process stay on the steel and out of your food.
Fischer Sharpening Steels
Treated from 64 to 66 HRC which allows sharpening of all knives currently on the market.
Coating provides protection against corrosion by a hard chrome layer of 8 to 10 microns. This layer increases the surface hardness of edges from 3 to 4 HRC. Using the sharpening steel:
Pass the sharp edge of the knife edge over the full length of the sharpener by lightly pressing then start over on the other side of the sharpener to sharpen the other edge of the blade.
Repeat the operation alternately on both sides of the blade.
Keep the knife slightly tilted at an angle of 20 ° to 30 °.
